Vietnamese Pho

A healing bowl of aromatic broth, silky noodles and fresh herbs. Good for the soul.

Ingredients

  • 1 litre beef stock, good quality
  • 1 star anise
  • 1 stick cinnamon
  • 2 cloves
  • 1 thumb ginger, sliced
  • 200 g flat rice noodles
  • 200 g beef sirloin, thinly sliced
  • 2 tbsp fish sauce
  • beansprouts, Thai basil, lime, chilli, to serve
  • hoisin and sriracha, to serve

Method

    Toast star anise, cinnamon, cloves and ginger in a dry pan. Add to the stock and simmer for 20 minutes.

    Strain the broth. Season with fish sauce.

    Cook rice noodles according to packet instructions. Divide between bowls.

    Lay raw beef slices on top of the noodles. Ladle the boiling broth over — it will cook the beef. Serve with beansprouts, herbs, lime and chilli.
